Marinate and grill the chicken. Mix together the olive oil, spices, lemon juice, salt, and pepper and coat the chicken well. Grill over medium-high heat for 6 to 7 minutes per side until cooked through. Let it rest before slicing.
Cook the cauliflower rice. Heat olive oil in a skillet over medium heat. Add the garlic and stir for about 30 seconds, then add the riced cauliflower, turmeric, salt, and pepper. Cook for 5 to 6 minutes, stirring regularly, until tender.
Build the bowls. Divide the cauliflower rice between bowls. Top with sliced chicken, cherry tomatoes, cucumber, and parsley. Finish with a squeeze of fresh lemon.
