Ingredients

For the skillet:

  • 1 pound ground turkey
  • 1 tablespoon avocado oil or olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1 (14- to 16-ounce) bag coleslaw mix
  • 2 green onions, sliced
  • 2 large eggs, lightly beaten
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

For the sauce:

  • 3 tablespoons low-sodium soy sauce or tamari
  • 1 teaspoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon sriracha, optional
  • 1 teaspoon coconut aminos or a pinch of brown sugar, optional

    • Brown the turkey:
