Ingredients
For the salad:
- 2 large English cucumbers, diced or sliced into half-moons
- 2 ripe avocados, pitted and diced
- 1/3 cup red onion or scallions, thinly sliced
- 1/2 cup cherry tomatoes, halved (optional but recommended)
- 3 tablespoons fresh cilantro or parsley, chopped
- 2 tablespoons fresh mint, optional
For the lime dressing:
- 3 tablespoons extra virgin olive oil
- 2 tablespoons fresh lime juice or lemon juice
- 1 clove garlic, finely grated
- 1/2 teaspoon sea salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon cumin, optional for warmth
- Pinch of red pepper flakes, optional
For finishing:
- Flaky sea salt
- Extra cilantro or parsley
- Lime wedges on the side
