Ingredients

For the cod:

  • 4 cod fillets, about 5 to 6 ounces each
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon paprika

For the garlic butter sauce:

  • 3 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 2 tablespoons fresh lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley
  • 1/4 teaspoon red pepper flakes, optional

For serving:

  • Lemon wedges
  • Extra chopped parsley

    Make sure to carefully follow each step of the instructions for the best results :

    • Season the cod.
      Pat the cod fillets dry with paper towels, then season both sides with salt, black pepper, and paprika. Drying the fish first helps it sear better and keeps the surface from turning watery in the pan.
    • Sear the fish.
      Heat the olive oil in a large skillet over medium heat. Add the cod fillets and cook for 3 to 4 minutes on the first side, depending on thickness, until lightly golden. Carefully flip and cook for another 2 to 3 minutes, just until the fish is nearly cooked through. Transfer the cod to a plate.
    • Make the garlic butter.
      Lower the heat slightly and add the butter to the same skillet. Once melted, stir in the garlic and cook for about 30 seconds until fragrant. Add the lemon juice, lemon zest, parsley, and red pepper flakes if using. Stir gently and let the sauce bubble for just a few seconds.
    • Finish the cod.
      Return the cod to the skillet and spoon the garlic butter sauce over the top. Let it cook for another 1 to 2 minutes until the fish flakes easily with a fork and is fully cooked through.
    • Serve warm.
      Remove from the heat and serve right away with lemon wedges and a little extra parsley on top. Spoon the pan sauce over each fillet before serving for the best flavor.
